Professional Summary

Wes Osburn, Ph.D.,  is an associate professor in the meat science section in the Department of Animal Science. He received his bachelor’s degree in agricultural education from Texas A&M University in 1981.

Upon graduation, he taught high school agri-science and worked in his family’s meat business before deciding to pursue his advanced degrees. He received his master’s in meat science from Texas A&M University in 1992 and his doctorate in animal science from the University of Nebraska in 1996.

Osburn came to Texas A&M University in September, 2004 after eight years as a faculty member at Michigan State University. While at MSU, Osbourn held a joint appointment in the Department of Animal Science and the Department of Food Science and Human Nutrition. He also coordinated the MSU meat judging program.

Osburn will work with Texas, national, and international meat processors on topics including processed meats, value-added products, food safety, and meat quality.
