Professional Summary

Dr. Drew Cassens is an Assistant Professor and AgriLife Extension Meat Specialist in the Department of Animal Science. Drew earned his bachelor’s and master’s degrees in animal science from Texas A&M University in 2015 and 2017 respectively. He then completed his doctorate in animal and food science from Oklahoma State University in 2020.

As an extension meat specialist, Cassens works with county extension agents, youth and industry personnel by developing educational programs relating to carcass composition, quality and tenderness attributes. His primary focus is the livestock to meat interface working to achieve wholesome, high quality meat products for producers and the consumer. Cassens also works with Texas A&M AgriLife and Texas A&M faculty to conduct industry applicable research in areas of meat quality, tenderness, & retail display.

Professional memberships include the American Meat Science Association and American Society of Animal Science.
