Dr. Robert Pellegrino, an Assistant Professor of sensory science in Texas A&M’s Animal Science department, has co-authored Rediscovering Flavor: A Practical Guide for Smell Loss, the first practical handbook on olfaction for both lay readers and scientists. In the wake of COVID-19, nearly 25% of the population experiences some degree of smell impairment, from total loss (anosmia) to distorted perception (parosmia), and with smell being the dominant contributor to flavor, loss of enjoyment in eating is a leading cause of depression among those affected.
