Gibbs works directly with county Extension horse programs and district-wide task force groups on program development for educational activities for producers and users. With technical specialization in nutrition and management, he is involved in ongoing research efforts that yield applicable results to the horse industry. Gibbs works with the feed industry in ongoing education for horse feed manufacturers and their representatives. He also works closely with the state's youth programs, particularly 4-H horse project clubs, through the organization of in-depth clinics and multi-district, statewide, regional and national judging opportunities.
He is active in the Equine Nutrition and Physiology Society and the American Registry of Professional Animal Scientists. He is certified as a Charter Diplomate of the American College of Animal Nutrition. He serves on committees for graduate students conducting equine research at Texas A&M. He is a member and approved judge for the American Quarter Horse Association and the Appaloosa Horse Club, and he serves as an advisor to the Texas Quarter Horse Youth Associations. In 2003, Gibbs received a Vice Chancellor's Award in Excellence for his contributions as part of the Horse Theft Awareness and Prevention Initiative Team.
